My husband recently had a dream that he began pulling out his beard. It didn't hurt, so he pulled it all out. He then went to look in a mirror and his eyeballs deflated and became flat.

I believe that dreams only have the meanings that we assign to them. The dream has no objective meaning. Try "talking it out" with someone who can help to develop a context for the dream that is the way to discover where it came from and what it's all about in the context of your overall situation.

My take would be that pulling out the beard is his desire for some kind of change in his life. The eyeballs could represent his feeling as though he can't see what he needs to do in order to facilitate that change.
