First off, assault is assault even if done by remote or trigger. What you have set up, while similar to an automated security system by nature, it has been set up with malicious intent hich is what classifies it as assault. Second, you're lucky with only assault at the moment. There are people who are deadly allergic to the chemicals used in those sprays and can go into anaphylactic shock. Should that happen and the victim of your "prank" die, you'll be looking at homicide charges.
In any case, yes, it's over the line and I would urge you to take it down. As a rule of thumb for the future, if anyone cries, it's over the line.

I don't think it's a joke. Not only is it over the line, it is endangerment and contributes to a hostile work environment.
For example, if anyone's eyes are injured with the pepper spray, they may sue your company -- it's worker's compensation when the injury is at work.
When you are found out, you may be a defendant in a civil law suit to recover any medical expenses from the victims.
Please disconnect this dangerous stunt before anyone gets hurt.

I hope you are joking about this but if you aren't most work places now have cameras catching your images that you don't even know about in places you can't see. Also, if somebody gets hurt, the police will get involved. Then again someone who would do something like this doesn't strike me as the intelligent type. You sound like the type that enjoys the show Jackass but takes it too far.
Hey, why don't you let someone spray pepper spray in YOUR face, and see if you laugh?
