Leaving aside debates over catholicism and religion, I'd be very impressed if anyone knew of any young person who had become a nun recently in the United Kingdom?

I don't think that anyone today can enter the Religious life before the age of 18. In earlier years, even as late as the 1950's pre-teens could go into Religious orders, but not today. I live in the U.S., but I think it is the same everywhere after Vatican II.
