make SOS..sh*t on a shingle, bad name but still good.
You can either use white gravy if you know how to make that (it is basically flour butter and milk) or you can use cream of mushroom soup. You fry the meat and then add about 2 cans mushroom soup mix with only half a can of milk per can or it will be too runny and serve over bread. My kids love it and it is VERY cheap

This recipe is FANTASTIC. We love it. I was skeptical at first because of the ingredients, but tried it because of the great reviews and am SO glad that I did. It is SO good and super easy. Have a look at the reviews if you like. You'll be a believer once you try it.

CHEESEBURGER PARADISE SOUP

6 medium potatoes, peeled and cubed
1 small carrot, grated
1 small onion, chopped
1/2 cup chopped green pepper
2 tablespoons chopped seeded jalapeno pepper
3 cups water
2 tablespoons plus 2 teaspoons beef bouillon granules
2 garlic cloves, minced
1/8 teaspoon pepper
2 lbs. GROUND BEEF
1/2 pound sliced fresh mushrooms
2 tablespoons butter
5 cups milk, divided
6 tablespoons all-purpose flour
1 package (16 oz) process cheese cubed

In a pot combine the first nine ingredients; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.

meanwhile, in a large skillet, cook beef and mushrooms in butter over medium heat until meat is no longer pink; drain. Add to soup. Stir in 4 cups milk; heat through.

In a small bowl, combine flour and remaining milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Garnish w/bacon (optional)

You can eliminate any ingredient you don't like such as the jalepeno but it does add a nice flavor.

jarred hot sauce, if desired to spice it up

Mix soup and sour cream in a separate bowl.
Spread 1/2 sour cream mixture in the bottom of a casserole dish.
Tear up 3 tortillas and spread over sour cream mixture.
Put 1/2 the meat bean mixture over that.

You could put some hot sauce on this now.
Repeat the layers.

Southwestern Stuffed Peppers

4-6 servings 1 hour 15 min prep

1 lb lean ground beef
1/4 cup chopped onions
1 (1 1/4 ounce) package taco seasoning mix
1 egg, beaten
2 cups cooked rice
4-6 bell peppers
1 (19 ounce) can diced tomatoes
1 (15-16 ounce) jar salsa
shredded cheddar cheese
sour cream

Combine beef, onion, seasoning mix and egg in a large bowl.
Add rice and mix well.
Cut peppers in half lengthwise; remove seeds and membrane.
Spread tomatoes on the bottom of an ovenproof 12 X 9 inch baking dish. The liquid from the tomatoes will reduce during cooking so if (like me) you like lots of sauce, add about a cup of water. This also helps make the peppers softer.
Place peppers, cut side up, on top of the tomatoes.
Spoon beef mixture into peppers, mounding as necessary.
Top each pepper with salsa.
Bake in preheated 375°F oven for 40-45 minutes or until beef is cooked thoroughly and peppers are soft.
Cover each pepper with cheese and return to oven, under the broiler, until the cheese melts- less than a minute, so watch carefully!
Serve with sour cream and additional salsa.
