I have a recipe for banana cookies that I really want to make but I am out of vanilla. We are all snowed in so I can't even run to the store...What will be the taste difference without the vanilla...Here is the recipe

2 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup sugar
2/3 cup margarine
2 eggs
1 teaspoon vanilla
1 cup chocolate chips or raisins
1 cup mashed bananas

You can definitely use butter. as long as its salted. Vanilla is to enhance other flavors. a teaspoon probably will not make too much difference. One of my classes in school was all about using the wrong or different indgredients in recipes. Vanilla never made to much of an impact. It is a small amoutn. I think you will be OK.

you can use butter instead of margarine and it won't matter if you don't have vanilla, the vanilla just adds a bit of flavour and sweetness
the recipe will be fine without it

use butter, definitely not oil! If you have a bit of rum you can add it (dark is better) about 1/4 tsp. If not the banana should be sweet enough particularly with butter rather than marg.

If you have another kind of flavoring (I thought of almond), that would work fine, or just leave it out all together. I would use butter instead of oil in place of the margerine.
