You might consider checking with your local parks and recreation department. They typically have a great need for help to keep hiking trails, canyons, beaches, etc. clean and usable for the public.
Through your volunteer center, you can also find contacts at these and other non-profit groups in your area. They can also help you with recruitment of volunteers:

Here are some other ideas of stuff that has been done in my local area:
- Refurbished a community center
- Painting and general cleanup of all the local schools
- Neighborhood cleanup and refresh (revitalization project)
- Cleanup of graffiti and other stuff on local buildings
- Replanting and cultivation of local park area
- Beach cleanup
- Revitalization of local park for little league
I'm sure that there's a lot of other stuff that can be done within your local community.

Here are some ideas:
1) Assist Habitat for Humanity if one is in your area
2) Food bank projects or feeding program
3) Toy and Clothing Drives for needy families
4) Adopt a Highway (but people have to be a minimum age)
5) walk-a-thon for a charitable cause

Only 1 comes to mind, like 1. picking up debris, from the community park in your area, and bagging it as you go, then set it in the garbage bins that are usually setting around on park grounds.
