You'll definitely have to checkout the Potter's Cay Dock beneath the Paradise Island bridge. The fisherman pull their boats up and sell off the backs of their boats and from little market stands. There are other vendors as well... fruit, vegetables, nick knacks, beer, etc. It's a good experience, especially if you have kids because they will have a chance to see how conchs are shelled, and most venders will offer for you to try some of the more exotic foods. It's a fun and definitely educational experience! But you need to go there fairly early in the morning. By lunchtime, many of the vendors have closed-up, and like any fish market, there's a "fresh" factor to consider. :P
I've been there a bunch of times over the years... last time, like you, was with a cruise.
If you weren't on a cruise, I would suggest that you take a supply boat or charter your way out to one of the more remote islands... that way, you'd experience a much richer & different culture. Perhaps you could consider this trip a primer... and head back soon with a less restrictive itinerary?
You'll see from the deck of your boat, as your ship is docking, that the amount of American & Canadian commercial influence in Nassau and Paradise Is. is staggering. This is going to make it hard for you to see much that isn't touristy.
One thing you might want to consider, if you really do want to avoid the regular tourist sites... is rent a car for the day. I did. I think it cost me around $50.00. I called them from my cell phone as we were disembarking, and the rental company was sitting at the dock waiting for us... this will give you a chance to sightsee the island without a destination (and to drive on a British road system)!
If you have more questions, feel free to toss an email my way via my profile... I'd be glad to help or to answer any additional questions that I can.
Enjoy your trip!

I presume you are going to Nassau, Bahamas. The main attraction there now days is the Atlantis Hotel on Paradise Island. Otherwise do the Straw market and/or head to a beach.

I suggest getting an all day excursion through the cruise line to spend the day at Atlantis on Paradise Island. You'll never see the whole place though. If you are in port overnight, you have to hit Senior Frog's!!

There is So much to do their. One thing i would recomend is going to the Art Market...
Although it is smaller than the famous Hat Market, its way less crowded and most of the locals go their. ALso you might want to go to Potter's Cay Dock. It was great their. If you go on your cruises website you could find out where the excusion is going and then just go around their. You could also just go up and ask a local if their is anything to do where it is not crowded.
