Corned beef to me is Deli, so I would prepare Deli accompaniments such as coleslaw, dill pickles, potato salad, cold pop, soda water, other relish tray items even other cold cuts on a platter and a fruit salad platter is good with all sorts of food.

Eat the corned beef thinly sliced on top of the cabbage, with fresh horseradish, and the potatoes on the side with plenty of butter.

We have been eating it with cabbage and red potatoes for over 45 years. Handed down from my great grandmother of irish descent. Some prefer to add carrots as well. The most important ingredient is the pickling spices.
And when it's all said and done don't throw out the broth. Get more cabbage & veggies and make soup. Yummy!

Boil the cabbage, potatoes, and carrots together. A little mustard on the side. Irish soda bread and butter. Wash it down with beer or green ginger ale for the kiddies. Yum!

Corned Beef goes with Cabbage and Potatoes. No carrots, the irish are typically bland eaters, not to many colors in their food. You definitely need the soda bread.
Don't forget to slice the cornd beef thinly...No chunks...
