Incredible Melted Ice Cream Cake question?

Could I use rainbow sherbet in place of the ice cream?

Of course you can. Sherbet is made from some of the same ingredients like cream and eggs. The consistency of sherbet works with a cake as opposed to Sorbet which does not use the eggs and cream.
