As you are very likely aware of prior to the asking of the question, the shedding of blood was for the remission of sins, in order to satisfy the judgement of God against against people who willfully and continually spit in the face of a Just, Holy, and Omnipotent God (not a great strategy by they way). He did not have to provide a way out for humanity, but chose to do so as he is merciful. Being merciful does not cancel out the fact that he is still Just and Holy, and these attributes must still be reckoned with.
Hence the sacrifice of his son to meet the demands of Justice and Holiness.
The issue of Communion/Lord's Supper, as you are likely aware of prior to the asking of the question, is a recognition of the New Covenant with God, for redemption by grace through faith. Rome believes that the wine is actually the Blood. Luther and Calvin both had high views of this sacrament, closer to each other than did Rome, both viewing these as a means of receiving grace. The 3rd view is the commemorative view.
The important point of this sacrament is to bring to you the realization of how bad things could be for you if you are outside this covenant, how good things ultimately are for you if you are under this covenant, and that this should humble you and make you feel a sense of gratitude.
And, the comments about shedding blood for the remission of sins is tied to the Cross of Christ, as is the sacrement of Communion/Lord's Supper

Before the Last Supper, Jesus knew that He'd be persecuted to death and that He'd be nailed on the cross to save the people from their sins. Salvation is given free-of-charge, if anyone will come and accept Him as their personal Lord and Savior, He's just to forgive them. That was what He meant by drinking His blood (receive salvation) as His blood cleanses the people from their sins.

This is done as an act of remembrance. Jesus told us to eat the bread as a remembrance of his body dying on the cross for our sins and the wine was a symbol of the blood he shed on the cross for our sins. He does not really wish you to drink blood. Christians do this every month to help them remember his sacrifice and why we are here on this earth.

Jesus was refering to the Eucharist, in which bread and wine become the body and the blood of Jesus, while retaining their sense appearances (such as look, taste, feel, etc.)|
The being of bread or wine that is converted into the being of Christ's body and blood, is technically refered to as "substance."
The sense appearances of bread or wine are technically refered to as "accidents."
That is why the change in bread and wine into the body and blood of Christ is known as "Transubstantiation."

He didn't literally mean for people to drink His blood. What He meant is for people to put their faith in Him and in everything that He teaches about God. To drench ourselves, fill our hearts and spirits with Him.
