Just curious - where did you get your meat?

Because if you got it at Wal-Mart, they inject their meat with all kinds of crap that makes it taste bitter, imo. It might say "sirloin" on the label, but if you look at the asterisk it then says it's "enhanced" and there's a long list of chemicals on the back.

Sometimes if your wood was not completely dry (cured), you can get a little bitterness. The apple trick generally will help, and using beer instead of water sometimes will mellow flavors. Good luck.

Try putting a couple halved apples into the water container. That should cut the bitterness, although I cannot explain why it happens, esp. w/ those good woods.

I assume the woods are not rotten....?
