My brother and I are planning on cooking dinner for our Mum 2moro. Our Dad is going to America 2moro so he isnt there nd they are going out 2 a friends house 4 dinner tonight. It is highly likely they will have chicken there, so I want something different to cook for her.
She likes just about anything, and a 3 course meal would be good.

what is something she likes but only gets on special occasions? i'd make that.

or

i like "breakfast for dinner" if that isn't too low key and cheesy for you,breakfast foods are delicious and easy,lots of options for a buffet style,and you could dress it up with fresh flowers etc. i bet she would think that was very sweet.

or
you can't go wrong with a good spaghetti,salad,garlic bread and cheesecake or pie.

Torta caprese - (chocolate almond cake)
1 cup Unsalted butter - (2 sticks); softened
½ pounds Sugar
5 large Eggs; separated
6 ounce Bittersweet chocolate (Callebaut); grated fine
5 ounce Finely-ground blanched almonds
2 tablespoon Cognac or brandy
1 ½ tablespoon Potato starch
½ teaspoon Ground cinnamon
1 pinch Salt
Sifted confectioner's sugar; for garnish

Preheat the oven to 350 degrees. Line a 9-inch springform cake pan with foil. In a bowl with an electric mixer cream the butter with all but 1/4 cup of the sugar and beat until light and fluffy. Add the egg yolks, one at a time, and beat the mixture until combined well. Stir in the chocolate, almonds, cognac, potato starch, cinnamon and salt. In a bowl with an electric mixer beat the egg whites until they are foamy. Add the remaining sugar, a little at a time, and beat the whites until they form soft peaks. Stir 1/4 of the whites into the batter and fold in the remaining whites gently but thoroughly. Pour the batter into the prepared pan and bake for 40 minutes, or until puffed and still slightly loose in the center. Transfer to a rack to cool completely. To unmold, release the sides from the pan and peel back foil. Invert cake onto a plate and carefully peel off foil from bottom of cake. Invert cake onto a serving plate and dust top with confectioner's suga

This is a really yummy dish that is very easy to prepare-

Creamy Garlic Penne
1 (1 lb) box penne or penne rigate, cooked as directed, drained and kept hot
2 tablespoons butter or margarine
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken broth or beef broth
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Melt butter and add garlic in a medium sauce pan.
Cook over medium for 1 minute.
Add flour and cook 1 minute, stirring contantly.
Stir in broth and milk and cook, stirring frequently, until sauce boils and thickens.
Add parsley, salt, pepper and cheese.
Stir until cheese is melted.
Toss hot pasta with sauce and serve immediately


Another GREAT dish is stuffed pasta shells
12 ounces jumbo pasta shells
1 1/4 cups mozzarella cheese, shredded (Reserve 1/4 cup)
1 cup parmesan cheese, grated
2 lbs ricotta cheese
4 large eggs, lightly beaten
1 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon dried parsley
8 ounces spaghetti sauce (jarred or homemade)
fresh basil, chopped, for garnish

In an 8 quart pot, bring water to a boil and cook shells for 8 minutes or until al dente.
Drain and cool immediately with cold water.
Drain and place open side down on paper towels.
In a medium bowl, combine the rest of ingredients except the spaghetti sauce.
Reserve the 1/4 cup of Mozzarella.
Place a thin layer of spaghetti sauce into the bottom of a 12 x 9 x 2 inch baking dish.
Preheat oven to 375 degrees Fahrenheit.
Spoon the cheese mixture into each pasta shell and place open side up, in a single layer, in prepared pan.
Pour the rest of sauce over the stuffed shells.
Loosely cover with foil and bake for 40 minutes.
During last 5 minutes of baking, remove foil and sprinkle remaining Mozzarella cheese on top.
Bake 5 more minutes.
Garnish with fresh chopped basil.

Stuffed bok choy that is steamed
stuff it with wild rice, mushroom, apples or pears
as your starter
for you main lets got with a pot dish or a casserole
how about some stew but let's use duck cut carrots and onions celery peas corn and what ever else you can find a throw it in
and to finish
home made apple crisp and some ice cream

A good meal is lasagna,green beans garlic bread and a salad.but if some one is bringing chicken and you don't want to over do it then with the chicken make some rice, sweet water corn bread,cabbage, and meat wise make some meat loaf, or some kaboskie goes good with cabbage. some mashed potatoes goes good with the meat loaf.

Dish 1. meat loaf, mashed potatoes, cabbage, gravy,
Dish 2. Kaboskie, cabbage with green peppers and onions,rice,and bread.
Dish 3. Lasagna, garlic bread, green beans, salad.
Now what ever you do for desert make a cheese cake or a 3 layer chocolate cake
