Say the dinner needs to go in the oven at 4:30, Can I peel the veggies (potatoes, parsnips, squash, peppers, garlic etc) at about 10 a.m and just keep them in cold water until I roast them?

don't keep them in water (besides the potatoes) the rest of them will keep just fine as long as you keep the in a ziplock bag. If you keep them in water you will just lose the flavor. I assume you are going to be braising them or roasting them so you will be adding back the moisture, don't worry if they look a little dry they will bounce back just fine! No WATER!

I am not exactly sure how many hours before, but I will tell you from experience that I have already peeled potatoes and vegetables and put them in water and left them sit on the counter in cold water for most of the day until I was ready to use them. Meaning that I have peeled them around 6 in the morning and used them near 5 in the evening. I just continued to put ice ion them periodically throughout the day. Hope this turns out well for you. As long as they are kept cold and in water (to keep them from turning dark) you certainly can keep them a few hours. I have prepared them a couple of days in advance. The peppers will not keep as long as the potatoes and parsnips. Why not try the slow cooker sometime? If you want to prepare them in the morning you can do it all then, and dinner will be ready when you are. If you have a browning microwave, you can take the meat and vegetables out of the slow cooker, place them in the microwave and brown just before serving. It will look delicious and be ready when you are. One of the most important parts of cooking is the way the finished product looks when you serve it. You want the finished product to look as good and it tastes.

Nope because that will take all the nutrients out of the veggies and it will also drain the color from them too but since the veggies are mostly white that part wont be an issue the peppers and garlic can just put them in the frig. until u are ready to use them

I have peeled them numerous days before and kept them covered in water in the frig.

Running restaurants requires prep sometimes days ahead and there is nothing wrong with these vegetables by doing this !!

I do it all the time! Keep them in cold salted water and then rinse in a collander before cooking.

well im fat so i eat alot i would say its great to keep them in the frig were its cold then cut it then cook it
you dont want it all soggy then it losses its flavor
