I have a cold, and don't feel up to the all-day process of making real chicken soup. I don't have any cooked chicken, so does anyone have any ideas for making a quick soup that will still do the trick?

Quick and easy. Yields 4.
INGREDIENTS:
2 fillets of chicken
1 yellow onion
8-10 dl chicken (or hen) stock (cubes)
400 g broccoli
2 tablespoons butter
2 tablespoons flour
1 tablespoon fresh thyme, rosmary or sage
salt & pepper

METHOD:
Cut the chicken fillets into small pieces.
Peel and chop the onion.
Cut the broccoli into small florets.
Bring the stock to a boil in a large pot.
Add onion, chicken and broccoli.
Simmer for about 5-8 minutes.
Salt, pepper and herbs to taste.
Mix butter and flour together.
Put it in the pan, stirring.
Cook for a couple of minutes.

the only way it could be a quick recipe is if you already have the chicken cooked from another day ---- go to kraftfoods.com or myfreerecipes.com

or just hot water & chicken stock. =)

Use store bought stock or broth, rice, veges, either poach a chix breast, or buy canned chicken......there's always Lipton's...

one potato one onion one carrot 2 stems celery fistful of rice salt pepper ..boil and squeeze 1/2 lemon when done..
