I from the dirty south so try this:
I love fried chicken. The way i usually make it is:
I have a bag of flour (all purpose is fine)
My oil is on the stove getting nice and hott
Clean the chicken well under cold water
Then I use Morton's natural seasoning, McCormick's salt free chicken seasoning, paprika, garlic powder and onion powder.
Take an egg or two depending on how much chicken you will fry and beat it in a bowl by itself then add a little
milk 3/4 to 1/2 cup.
See if your oil is ready by taking a little water on your hands and flicking it in the pan; if it sizzles and pops it's ready.
Take you clean seasoned chicken and coat it in the egg wash and then drop it in the bag of flour. Make sure it is all covered and shake the bag up (that gets it real good) the drop in the pan and let it cook. You can take it from there.

Oven-Fried Chicken

Everyone loves fried chicken. I wanted to find a way to fry it in advance so I wasn't standing at the stove, covered in grease, while everyone waited for dinner. Parker Hodges at Barefoot Contessa solved the problem brilliantly. Now I fry each piece for about 10 minutes, and then cook the chicken on a baking rack in the oven, which makes it crisp on the outside and tender and juicy on the inside. It's so much easier and you don't need to scour the kitchen when you're done! Just remember that the chicken needs to marinate overnight.
2 chickens (3 pounds each), cut in eight serving pieces
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Vegetable oil or vegetable shortening
Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350 degrees.
Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1 inch and heat to 360 degrees on a thermometer.
Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.
Most people use a frying pan, but I use a stockpot so the grease doesn't get all over the stove (and me!).
I use a candy thermometer to check the oil temperature.

KFC Chicken Secret Spices
I've never tried this, just saw it on another board and had to snatch it up! There are actually 11 spices in the above combination, but an additional 3 ingredients were necessary to get that special flavor.
1 tablespoon rosemary
1 tablespoon oregano
1 tablespoon ground sage
1 teaspoon powdered ginger
1 teaspoon marjoram
1 1/2 teaspoons thyme
3 tablespoons packed brown sugar
3 tablespoons dry minced parsley
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
2 tablespoons chicken bouillon powder or 4 chicken bouillon cubes, crushed
1 package lipton cup tomato soup mix
Place all ingredients in blender and pulse for 3-4 minutes to grind well.
Store in an airtight container.
Makes about 3/4 cup.
To use with flour, add 1 oz mix to 1 cup of flour for coating chicken.

Just roll that chicken in some milk and dip it in some seasoned flour - then right into the frying pan.
And, don't stress out over the flour. If you want, just add some salt and pepper. You can add sage and the rest of the Coloneh's seven herbs if you want.

Salt and pepper one cut up chicken. Mix 2 beaten egg w 2T milk.
Dip chicken in egg, then in flour which has salt and pepper.
Shake off excess flour.
Heat oil in a wok, half way filled. When oil is hot, cook chicken over medium- low heat till brown on bottom, flip only one time, cook till brown. To be sure it is cooked, cut into one piece. THere should be no red blood. For best flavor, marinate chicken in oregano, salt,and sliced onion.

its a sin, but try fresh chicken drumsticks or wings, salt and pepper them lightly and then fry them submerged in oil, just like French fries, until crisp... dead simple, like many of the good recipes! Uh, my mouth is watering. But as I said, it is a sin...

Salt & Pepper your chicken, dip in flour, dip in buttermilk, dip in flour, dip in buttermilk again and then fry in vegetable or canola oil until done. (Buttermilk is the secret)
