Sure, though it's best to incorporate that into a sprawl, transition quickly to a thai clinch and then go for the knees.
Otherwise their forward momentum will be tough to deal with.

You need to read the situation and have reflexes to do the knee thing, but do keep mindfull of the takedown. These days it is a real threat.
If you do find that someone is shooting for your knee spread your feet and let them sprall or slide bacl with the motion of the opponent and elbow their neck and head if they stop or if you get them early do the knee to the face. I also like to drop a few Elbows down straight to the head it will usually stop whatever wants a try.

alot of good answers so far. heres my take on it. I really fight people(not so often anymore thank god) i have really seen done and had done things that you say only a pro or every joe could do it. a knee to the face is a beautiful move, like poetry in motion to me, first thing make sure you have some control over the victims momentum. try putting your hand behind their head and actually helping them to the knee rather than hoping the knee finds the head. thats the way i do it, and it works.

Of course you can, right when they are going for your legs, you can knee them in the face and that would be an instant knock out. Other than that you could sprawl, get behind them, and unleash total damage by submitting them or anything else.
I also advise you to watch some Ufc Fights on www.youtube.com
They have this type of thing happen all the time.

I agree, as a martial artist and a wrestler I would say use a sprawl to stop forward momentum and then when they are repositioning go for the knee as they come up or the kick.

Watching from ringside or on TV this looks possible.
Buy the fact is it happends "So Fast",(when done by a pro) that if you happen to "Blink" when the move is made it may be too late to make one of these counters work.

You can try but you will find that what you are doing is giving the attacker access to your legs, which is what the takedown is all about. So if you don't knock him out, you will be mounted and having blows reign down on your skull.

u have to be lightning quick and also knee very hard, people such as wrestlers are used to avoiding knees on the way in so it isnt as easy as it sounds

In most competition, that is not allowed. In a real fight, absolutely. Those are among several possible counter moves.
