lay down a dish towel, and place a piece of plastic wrap on top of it.

Do all your sushi stuff, and roll it up, just make sure the plastic wrap doesn't stick together (good luck with that, i'm still fighting with my roll ;))

I made sushi many times without the mat. I just roll it by hand. The mat does make it a lot easier but it is not absolutely necessary. I put down the seaweed, put on the rice and then add what ever else I maybe putting in it and then start rolling it up tightly. It always turns out okay for me. Good Luck! =)

You don't need a fancy mat to roll sushi, although it helps tremendously! There are several alternatives:

1. A damp cloth
2. Waxed paper
3. By hand

If you use a damp cloth, start by putting down your sea weed, top with rice and filling, close to one edge of the cloth. You can then lift and use your hand to assist in the rolling motion to get it going. Pull the cloth up as you go along and you should be just fine. Same goes for the waxed paper, but be careful not to tear it. By hand is more complicated and less pretty, but functional, and, you could make "cones" instead of rolls!

I do it all the time, with a double thickness of foil, or a clean cotton dish towel. I have several mats, but find the rice gets gummed up in them. Just be sure to moisten your hands before rolling so it doesnt all stick. Happy sushi!

Yes, acctually there is hand rolled sushi, you put the rice and then whatever else you want and roll the dried seaweed up at an angle from a corner. It's really simple. You could most likely search it online and find directions.

waxed paper, of course didnt come out as good as the ones u make with a mat but it still taste good, just a little more sloppy =) GIRL I LUV SUSHI lol i just had to say that
