I am having 8 guests (total) over for dinner. How many cups of rice vs. how many cups of water do I use? I do not want my rice to come out too hard or too soggy. Any suggestions.

PUT 8 CUPS OF WATER TO BOIL WAIT TILL IT BOILS ADD 3 TABLESPOON OF SALT 1/4 CUP OF OIL,. ADD 4 1/2 CUPS OF RICE.....IF WHITE RICE DONT WASH ...........IF BROWN RICE WASH .........LET WATER EVAPORATE, ..........WHEN THAT HAPPENS TURN THE RICE WELL MIXED THEN COVER AND LOWER FLAMES AND DONT TOUCH TILL 20 MINUTES,,,,,,,,,,,,DONT UNCOVER UNTIL 20 MINUTES

Spanish Rice
1 1/2 c. rice
3. c. water
onion
garlic
red or green bell pepper
chicken bullion
cilantro

To cook:
1 1/2 c. white rice, washed & drained
3 c. water
Set aside

In a skillet, heat 2 T olive oil, and add
1/2 c. finely diced onion , 1/2 finely chopped bell pepper and
Rice
Toast rice until light brown and veggies are tender, then add
2 cloves garlic, chopped finely & stir for 2-3 min.
Do not brown garlic!
add
2T chicken bullion powder
Add 3 c. water and cook for 20 minutes, until rice is done.
Just before serving, put in 1/8 c. finely chopped fresh cilantro.

Delicious.

equal parts so that there is about 1/2 an inch of water above the rice. when you check it after about 20 mins stick a fork in the middle and see if there is water at the bottom if not add about 1/2 more so that the water is just even with the rice! good luck

Okay her is my recipe a traditional AUTHENTIC Spanish rice recipe
finely chop an onion, a bell pepper a tomato and two cloves of garlic. set aside.
In a glass mix four tbl of chicken boullion powder in two cups of water , any brand is okay, I use knorr
heat 2 tbl of oliveoil in a skillet til hot, add 1c white rice, toast the rice in the oil. when the rice is toasted, add the vegetables and the chicken broth. this should be bubbling. Cover and reduce the heat to low. cook for 15 minutes, turn off the heat. uncover it after 10 more minutes, and stir it. This is the real deal, it is an old family recipe.

Just use white rice...(Minute rice, follow the instructions on the box) & add the ingredients......Walla, you have spanish rice............OMG.....that was hard!............
