Absolutely No Cheese Mac'N'Cheese
* 3 cups macaroni
* ½ cup margarine
* ½ cup flour
* 2 teaspoon salt
* 2 teaspoon garlic powder
* a pinch of turmeric * 2 tablespoon soy sauce
* 1 cup nutritional yeast flakes
* ¼ cup oil
* 1 or 2 peppers, chopped (optional)
* Paprika to taste
Preheat oven to 350F.
Start boiling water in a pot for macaroni. Also, boil 3 cups of water in a teapot for making the sauce. When water boils, cook macaroni, stirring occasionally.
In a medium saucepan, melt margarine over medium heat. Stir in flour. When it has reached an even, bubbly consistency, stir in boiling water from teapot. Reduce heat to low. Stir until smooth again and add garlic, salt, turmeric, and soy sauce. Then slowly fold in nutritional yeast flakes and oil and stir until smooth. Mix the peppers in.
When finished, drain the macaroni. In a casserole dish (or other dish that can go into the oven), mix the sauce into the macaroni. Sprinkle paprika on top
Cook for 15 minutes at 350F and then for 5 minutes on "broil".

I like to make my kids bean burgers, You can use canned beans, just rinse them very well and add some finely chopped onion, bell pepper, and tomatoes and a teaspoon of sugar, I use canola oil to coat my skillet, just blend the ingredient together very well and you have to mash the beans first. Get some whole wheat buns, sliced tomatoes, soy cheese and some nice romaine lettuce and enjoy, I like honey mustard and barbecue sauce on mine.
You can also make some panini sandwiches with out an electric grill press, I included a link to one from HSN it's only 20 bucks and you will get those nice grill lines on your bread. and just buy some good honey wheat breat and add soy cheese with tomatoes and some slices of tofu that have been soaked in ranch dress, (I like ranch but I have used catalina with honey also.)
I would make my kids guacomole and or salsa with some tostito white corn chips with lime.
My kids love it, just look at what typical kids eat and put your own vegan twist to it buy adding different sauces and dressings, its easy just experiment.
Also try couscous with canned fruit ( I like fresh sliced mangos) and sprinkle some chopped almonds or walnuts on top, I like to make my own honey roasted ones.
It is so good you can switch it up by using some vanilla flavored soy yougurt over the couscous and add the nuts and omit the fruit.
You can also make fruit parfait with a layer of fruit, soy yogurt, nuts and some soy whipped cream and spinkle some carob flakes on top. I would use see thru plastic so that the kids can see the ingredients again it is all about presentation.

Peanut butter and bananas sandwishes are nutritious and tasty.
Serve with a glass of soy milk to add calcium and B12 and a side order of grapes!
Add vegan (soy cheeze) to whole grain macaroni with a vegan tomatoe sauce mix well, kids love macaroni.
Ground vegan sheppard pie
Sautée onions and cellery in olive oil, add one pack of prepared vegan ground soy (found in health food stores)
put in oven dish
top with 1 can of cream corn
and top with mashed potatoes!

I am not a vegeterian but I do like to watch my fat intake. I buy soy crumbles. I forget who makes them. The same people who make the garden burger. Anyway, its almost like ground beef, but its soy. You can put it in a pan with some taco seasoning and make tacos. I also put it on pizza crust with cheese and sauce. You can even put t hem on nacho chips with cheese and stuff for Nachos. They even make soy chicken nuggets. They are pretty good. You could make some fiesta fries with them. Just bake some frozen french fries in the oven. Melt some velveeta in a seperate pan. When the fries are done, put the cheese on top with some sourcream and scallions.

a spagettie fondue is great for veggie kids! Simply heat their favorite sauce in a fondue pot (couple of dollars in thrift stores) and add steamed brocolli, rosemary steamed new potato, tater tots (check ingredients) carrots, garlic bread, vegan cheese bites, sweet potato, etc. great dunking, and cool family time! We do this several times a week in our house. My 12 year old is a thriving veggie, as am I. When my childs friends come over for slumber parties every weekend, they never even realize there is no meat
