I want to start making more curry rather than always getting takeaway. What spices or other essentials should I get in so i can always knock something together?

Basic Indian curry:

Fresh: ginger, garlic, onions, tomatoes

optional: curry leaves, tamarind


Pantry Spices:

ground cumin
ground coriander
turmeric
red chili powder
garam masala

optional: bay leaf, coconut milk, mustard seeds, cumin seeds

If you go to any Indian or Asian market: they have ready made curry pastes and powders. There are so many varieties of both Indian (tikka, korma, vindaloo, makhani, jalfrezi...) and Thai (red, green, yellow, panang...)

These are the easiest: add you curry ingredients (any veg or meat/poultry/seafood), couple tablespoons of curry paste or powder and any liquid (stock, water, coconut milk). Cover, simmer & voila-- instant curry in a snap!

Well, I cook curry every night and in my cupboard I have the following

Must: Ginger Paste, Garlic, Onions, Turmeric, Cumin, Coriander, Red and Green Chili

Optional: cumin seed, black mustard seed, and bay leaf

With this you can cook pretty much any curry.

You could also just do Curry Powder and Garam Masala but, I think using the individual spices are much better...

Store cupboard implies not fresh. I have cummin or jeera, fenugreek, cardamon pods, mustard seeds, coriander seeds, turmeric, garam masala, mixed pepper corns and chili flakes.
Fresh chilis are better. You will also need ginger root (which you can freeze and grate when frozen), fresh garlic, canned coconut milk and canned tomatoes (fresh tomatoes are better). For the store cupboard, you could have lemon or lime juice in a squeezy bottle (again fresh is better).
In the freezer you should have lime (kefir) and curry leaves.

You'll need fresh coriander or parsley leaves as a finishing touch.

ALL of the above....only if you want to make some good curries, get your self a tiny herb garden to add a bit of freshness to them...a little pot on your patio will do. Curry's are a form of casserole or "use up" meal, so you can throw in whatever you've got and still get some good results!

tin chopped toms
shin beef (skirt)

Soften onions and garlic. Cut meat into small piece. Brown meat with Onions and garlic. Add turmeric,garam Marsala. Stir well. Add toms. Cook slowly for 2 hours. Best left cold and reheated next day. Chop coriander and add . Wonderful.

Pan sugar,curry powder,guram masala,chilli powder,paprika,ground tumeric,ground cumin,coriander . always keep some single or double cream handy i like to throw that in too.

Turmeric, chilli, corriander and cumin powders. These are just enough to make any basic curry.
