RICE BALLS

Ingredients:

1 lb. cooked rice, do NOT use instant
4 eggs
1/2 cup frozen peas, thawed & drained
1 lb. diced Mozzarella cheese
1/2 c. Parmesan cheese
1 stick melted butter
2 tbsp. parsley
1 tbsp. oregano
1/2 lb. finely chopped salami (or any ham)
salt & pepper to taste
Bread crumbs

Method:
Mix all ingredients well. Form into balls about the size of golf balls. Roll in bread crumbs and deep fry until golden brown.

Traditional arancini are made with italian rice(arborio). How you cook the rice is important, it needs to be like glue, it should be dark yellow(saffron)saute the rice with some minced onion for 2 mins. add enough chicken stock to cover rice and boil while mixing as the luiquid evaporated you keep adding hot chicken stock little by little untill rice is cooked.You should add and egg or two w/ some parmiggiano reggiano and mix good.you can stuff them w/ lots of things but the ones that I remember while growing up in Italy were,cheese, ham and cheese and a mixture of ground beef chopped tomatoes and peas. make sure the rice ball are tight roll them in flour then egg wash and then very fine bread crumbs...fry and enjoy!!

google "arancini" for some great recipes. I make these often, using peas, cheese, and mushroom ( I am vegetarian)

I think you get the sticky kind of rice. roll everything together in it and drop it in some hot oil and fry them...i dunno. lol sounds good though!
