Fake meats can be a really good choice for beginning vegetarians. With these, you can make what you are used to and use the cookbooks you already have, but replace the dead animals.
Many fake meats can be found in the freezer section of large grocery stores. Morning Star Farms makes great "chicken" and "beef" strips. Gardenburger makes a good "All-American burger" you can cook using pepper and garlic salt and all your favorite toppings. You can also find a lot of substitutes near the produce. YVES makes a great fake "ground beef" for tacos.
TOFU- Tofu is your friend and oh-so good. It is great for Chinese dishes as it soaks up the sauce flavor really well. Press tofu with paper towels, cut into cubes and cook in light oil until lightly-browned.
Other than the meat aspect, not much is different. You still have your pastas, whole grains, fruits and veggies.
When dining out, foreign foods are better. Go do Italian, Mexican, Chinese and Indian restaurants.

Its simple. Eat all of the things you are used to enjoying, just don't eat meat, chicken, turkey, pork, fish, deli meats, etc. Get protein from sources such as beans, pulses, and legumes. Watch for hidden animal ingredients, such as beef tallow in most fast food french fries. Eat lots of fresh fruits and vegetables. Try one you have never had before. Good luck!

The most important thing to remember when you become a vegetarian is to get all of your essential vitamines and minerals. This can be tricky, because meat and dairy products are our main sources of protein and calcium. If you take a multi-vitamine once per day you'll be great on calcium. You can also get your protein from things like nuts and beans. Good luck!

Eat anything that does not come from an animal. Vegetables, fruits, grains.....go to a health food store for excellent information, or to your local library, bookstore, or punch "vegetarian recipes" into your search engine.
