Is it true that blood is sometimes used as a salad dressing?

certain vinaigrettes are made with the juice of BLOOD ORANGES, this is a wonderful & delicious variety of oranges.

Blood Orange Vinaigrette:

Servings: 16 (8 ounces)
Serving size: 2 tablespoons
Preparation time: 10 minutes

1 shallot, minced
1 teaspoon sugar
1/2 teaspoon salt
5 mint leaves, minced
3 ounces The Perfect Purée Scarlet Orange Concentrate, thawed
2 1/2 ounces cider vinegar
5 1/2ounces olive oil
Freshly ground pepper to taste

Method:

Combine ingredients and whisk thoroughly.
Transfer to a squeeze bottle or covered storage container and refrigerate until use.

I've seen references to this practice in several different cuisines but I don't know how common it is. In French cooking I've seen a few recipes that use blood from fish and birds (Heck-fire, they sometimes eat small birds live). I seem to recall reading about old Etruscan recipes that do this also. I've witnessed it in Hong Kong and Singapore and from what I recall it's also done in several Chinese salads.

well, french dressing is sorta pink...that must be why I don't like it...hard to say what exactly it is made of..
