Can anyone give me a recipe for a really easy French dish?
Just something simple... Preferably like a small desert-type thing.

Chocolate Mousse (Mousse Au Chocolat)

INGREDIENTS:

4 egg whites
pinch of salt
8 oz bittersweet chocolate, chopped
1 orange (if using Grand Marnier)
2 Tablespoons sugar
6 Tablespoons heavy cream
2 Tablespoons Grand Marnier or Kahlua or Crème de Menthe

PREPARATION:

1. Put the egg whites into a mixer with a pinch of salt. Beat until stiff.

2. Melt the chocolate in top of a double boiler.

3. With a vegetable peeler, peel a strip from the orange and finely grate the rest of the orange.

4. When the eggs are stiff, add the sugar and whisk until glossy and they form a light meringue.

5. Pour the cream into a small pan, bring to a boil then pour over chocolate. Let stand 15 seconds then stir. Remove from water bath and stir in the liquer and orange zest.

6. Add the chocolate to egg whites, fold gently until mixed.

To Serve:

Pour into mousse pots, ramekins or stemmed glasses. Cover and chill for 2 hours. Decorate with a bit of the orange peel and serve well chilled.

Crepes Suzette

you can buy the crepes ready made or they are very easy to make with an electric crepe maker pan.

1/2 pound butter, softened
4 tablespoons sugar
4 ounces your favorite liquor
4 scoops vanilla ice cream

Fold your crepes in half twice, so they are in the shape of a triangle. In a non-stick pan over medium heat, melt half of the butter. When it begins to foam remove from heat and add 2 ounces of the liquor and 2 tablespoons of the sugar. Always add alcohol off of the heat to avoid a jumping flame.

2.Gently lay crepes into the pan. Turn the crepes gently, to coat. Lay the crepes out on a plate and top with ice cream. Pour remaining sauce over the ice cream. Serve at once..
