i do not want to serve the traditional chicken and spaghetti. i do not not expect to stay in the kitchen all night, but what can i cook that is good, and will soak up the liquor. i am frying chicken and having cole slaw, but what else?

Cheesy Appetizer Loaf (serves 24)
3 Tbsp. Mayonnaise
1/2 tsp. garlic powder
1 pkg. (8 oz.) Mozzarella Cheese Crumbles
2 Tbsp. chopped Spanish olives
1 loaf French bread (about 24 inches), cut lengthwise in half
Paprika

PREHEAT broiler. Mix mayo, garlic powder, cheese and olives.
SPREAD evenly onto cut surfaces of bread. Sprinkle lightly with paprika. Place on baking sheet.
BROIL, 6 inches from heat, 1 min. or until cheese is melted. Cut into 24 slices. Serve warm.

Creamy Tortilla Roll-Ups (serves 15)
1 pkg. (8 oz.) Cream Cheese, softened
1/2 tsp. garlic powder
3 Flour Tortillas
1 cup Refried Beans
1/4 cup fresh cilantro
1 jar (16 oz.) Chunky Salsa

MIX cream cheese and garlic powder until well blended.
SPREAD each tortilla with thin layer of beans. Spread cream cheese mixture over beans; top with cilantro.
ROLL tortillas up tightly; wrap tightly in plastic wrap. Refrigerate at least 30 min. Cut each tortilla into 10 (1/2-inch thick) slices. Serve with TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa.

Chocolate-Covered Creme Cookie Cake
1 pkg. (2-layer size) devil's food chocolate cake mix
4 squares Semi-Sweet Baking Chocolate
1/4 cup (1/2 stick) butter, cut up
1 pkg. (8 oz.) Cream Cheese, softened
1/2 cup sugar
2 cups thawed Whipped Topping
12 Chocolate Sandwich Cookies, coarsely crushed

PREHEAT oven to 350°F. Prepare and bake cake mix in two (9-inch) round cake pans as directed on package. Cool in pans 5 min. Invert onto wire racks; remove pans. Cool layers completely.
PLACE chocolate and butter in small microwaveable bowl. Microwave on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Cool 5 min.
BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add the whipped topping and cookie crumbs; mix lightly. Place 1 of the cake layers, top-side down, on serving plate; spread with the cream cheese mixture. Cover with the remaining cake layer, top-side up. Spoon glaze over top of cake. Let stand until set. Store in refrigerator.

Caramel Cheesecake Bars
1-1/2 cups crushed vanilla Wafers (about 50 wafers)
1 cup chopped Pecans, divided
1/4 cup (1/2 stick) butter, melted
4 pkg. (8 oz. each) Cream Cheese, softened
1 cup sugar
1 cup Sour Cream
3 Tbsp. flour
1 Tbsp. vanilla
4 eggs
1/4 cup Caramel Topping

PREHEAT oven to 325°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan to form handles . Mix wafer crumbs, 1/2 cup of the pecans and butter. Press firmly onto bottom of prepared pan. Refrigerate until needed.
BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add sour cream, flour and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
BAKE 45 min. or until center is almost set. Refrigerate 4 hours or overnight. Lift out of pan onto cutting board, using foil handles. Drizzle with topping and remaining 1/2 cup pecans. Cut into 32 bars. Store leftover bars in refrigerator.

Maybe some baked beans, a huge green salad is good even though you are having cole slaw. Potato salad is what we serve with fried chicken for parties and picnics. Maybe a green bean casserole. Then bring out the cake and ice cream.

I didnt know chicken and speghetti is a traditional Bday meal? Anyhow Id suggest throwing a couple steak's on the grill along with some baked potatoe's...just something simple. And dont forget the beer!

A nice big pot of Chili usually works for me. Once you have it all simmering nicely it just needs to be stirred occasionaly.

Or you could go with mashed potatoes, or even just boiled potatoes to go with the fried chicken.

What about lasagne? That can be made ahead of time too, it soaks up alcohol, is tasty, and most important you won't be in the kitchen all night.
