I was looking on here for a salsa recipe and found one but I don't really know what else to have. I am hosting a Bunko night at my house and it is scheduled from 6pm -8pm. Any suggestions would be greatly appreciated.

For quick and easy, and different ... try this.

You already have a recipe for salsa, so get some tortilla chips, some chili (canned is OK, with or with out beans. Hormel makes some.), some cheese sauce (the chip and snack aisle should have jars near the chips), and maybe some onions and tomatoes, and sour cream.

Make the salsa a day ahead. Put chili in heavy ceramic, ovenproof casserole, same with cheese sauce, and cover. Heat in oven, then turn oven down to warm until ready to serve (can hold for a couple of hours!). Chop some onions and tomatoes and place in covered containers in refrigerator, same with sour cream. Have a big bowl ready for the tortilla chips. When the time is right, serve up your Nacho Grande Party. Guacamole or avocado dip might be nice, but maybe not essential.

Regular snack foods like pretzels, potato chips and gold fish are great; and can be served with a variety of dips. Your salsa can be a special accent to the dips with some tortilla chips.

A mini sandwich buffet might work. A meat and cheese tray from the market with mini rolls and fresh artisan bread (the bakery may slice it for you) would be a great treat. Glam it up with unique and special mustards and spreads. Your salsa may make a great sandwich spread itself, and serve some chips and pretzels too.

First of all, Bunko is SO much fun. Second of all, you may want to look for neater snacks. Bunco is a fast paced game and messy snacks that require a little work, may slow things down.

But if you want to make salsa, here is what I do:

Chopped tomato
Chopped cilantro
lime juice
chopped jalepeno
chopped onion

Mix it all together and you have salsa!

My bunko group loves it when I serve this soup. The Zinfandel adds to the flavor but can be left out if you want:

Zinfandel Minestrone

1 pound hot Italian sausage
1 pound mild Italian sausage
1 chopped onion
3 carrots, chopped
1 zucchini, sliced
4 cloves garlic, chopped
3 quarts chicken broth
2 cans diced tomatoes
2 cans cannelloni beans, rinsed and drained
1 tablespoon dried basil
¼ cup Zinfandel
2 cups large shell-shaped pasta
Salt and pepper to taste
1 cup fresh grated parmesan cheese

1. Squeeze sausages from casings into a large pan. Cook until brown and crumbly, approximately 10 minutes. Discard fat.
2. Add carrots, onion, zucchini, and garlic. Cook for about 6 minutes until onions are soft.
3. Add chicken broth, tomatoes, beans, basil, and Zinfandel. Bring to a boil.
4. Add pasta. Reduce heat and simmer, covered, for about 10 minutes until pasta is tender.
5. Add salt and pepper. Serve into bowls and top with parmesan cheese.

This will make 12 servings.

All the bunko nights I have been too they just serve snacks at the tables...like bowls of chips, candy, pretzels. Things that people can eat that aren't messy and won't get all over the table.

Simple finger foods are best. You don't want to leave your friends for a long period of time to present the food. Make things that are easily eaten and do not need excessive time to clean up. Chips, dips and vegetables are quick, easy and can be enjoyed while playing. Meat roll-ups are also popular. Deli sliced ham, beef and turkey with a cream cheese and herb filling.

vegetables and dip like carrots, celery, broccoli, etc.

Pizza bites you buy a thin crust frozen pizza and cook it according to directions. let it cool slightly and cut it in bite size pieces and serve. It will not work with thick crusted pizzas.

That's all I can think of now.

Good luck.

try making some mini sandwiches...like chicken salad or something. Also, a cheese tray with crackers always works wonders!
