Curry is never easy to make.

Try this website

They have some good recipes and some bad ones, but I can promise that the ones that taste good wont be easy.

ADD:

This one's not too bad sounding:

I would change a few things:
-Replace half the water with V8 (my personal thing, it tastes great).
-Nix the curry mix and use 2 tsp. corrinader, 2 tsp. cumin, 3 tsp. tumeric, 1/2 tsp. cinnamon.
-After adding the mustard seed and before the other spices, add about 3-8 (depending on hot you like it) dried chili peppers to the oil.
-Non-stick pan is not necessary.
-The longer it cooks, the better it tastes, but don't overcook the veggies (a tough balancing act).

Try that and tweak it to fit your taste buds.
The seasoning stays the same, but the veggies change, so once you have a recipe that you like, keep using it.

From what I was shown about making curry for stir fry, which I have yet to try though, you boil some water and put a lot of the curry powder in their so it liquifies. As the water boils away the curry will thicken. So you put stir fry stuff into it during this process.

Again, I haven't bothered to try it yet. I learn to cook by experimentation.
