I've been told that it takes 3900 calories to gain a pound (that is, if you consume 3900 calories and don't burn them off through exercise or whatever). So if you consume 3900 more calories (worth of carbs or of any food) overnight than you burn, then yes, they can make you gain weight overnight. Reversely, if you burn 3900 more calories overnight than you eat, then you'll lose a pound overnight.

You are focusing on the wrong thing. If you get on the scale every day thinking that yesterdays meal made you gain 2 pounds, you have a ways to go.

You need to focus on eating properly most of the time, exercising, and not focusing on how much you are up or down (you know...oh my gosh I gained 2 pounds overnight) because this is typical of your body. You have weight fluxuation...and there really is no way around it.

Sure it is great to look at the scale everyday (as I do it too) but I would not beat yourself up on a daily meal yesterday making you gain today because it is just not the case.
