Nonalcoholic margaritas, taquitos, chips with salsa and guacamole, tacos. I would suggest Mexican hot chocolate but it will probably be too hot for that.
For favors - what about getting Cinco de Mayo stuff at a party store and painting it blue or pink?

Have all of your food in bite size portions. Buy some of those miniature tacos in the freezer section. Frozen taquitos can be cut in half. Soft drinks only due to the expecting mom. Place refried beans in the Tostitos Scoops. Have fun!!

Since it is a baby shower.. alcohol is probably out. You can decorate in red white and green. Have fruity drinks without the alcohol and put small pieces of fruit in ice trays and water, freeze and use in the glasses
refried beans, chips, and cheese dip for starters
Tacos and burritos are good finger foods

Well you gotta have tequila. How about fried rice and black bean quesadillas? Start with some really excellent quality tortilla chips and some bottled salsa from Frontera Kitchens.
