I make a great dressing by just whirling up some extra virgin olive oil, fresh lime juice, green onion, fresh ground pepper, and sea salt in a food processor. Also great done with green peas.

Most home-made salad dressings would be by their very nature vegan, unless they contained egg or cream. Oil (olive or what have you), acid (usually vinegar or lemon juice) and seasonings (herbs, salt and pepper). Nothing animal there. If you want something with a texture closer to mayonnaise, you could puree some tofu, and add flavorings of your choice.

real simple:
italians simply use extra virgin olive oil, balsamic vinegar, salt and pepper. that's it.
instead of the balsamic vinegar, you can use one whole freshly squeezed lemon
trust me, it will be the best dressing you'll ever have. i'm not vegan, and that's the only type of dressing i'll eat. the stuff in the bottles is complete crap. manufactured crap.
oh, and don't drench it. just sprinkle it as you can add more later as you like until you get a feel for it...

My fave is salsa and soy yogurt with fresh chopped cilantro. It's equally delicious on baked potatoes.
