Sweet Eggplant Stew (Semur Terong)
Ingredients
* 1 lb. eggplant
* 4 Tbs. vegetable oil
* 1 Tbs. shallots
* 1 clove garlic, sliced
* ½ cup water
* 1 Tbs. sweet soy sauce
* ½ tsp. pepper
* ¼ tsp. nutmeg
* 1 tsp. vinegar
* ½ tsp. salt
* 1 tsp. sugar
Directions
Cut the unpeeled eggplant into ½-inch-thick slices, and then cut the slices in half. Fry lightly in 2 Tbs. of oil for 2 minutes, or until light brown and softened. Set aside.
Stir fry the shallots and garlic in the remaining oil until light brown. Add the water, sweet aoy sauce, pepper, nutmeg, vinegar, salt and sugar. Let all of these ingredients cook for approximately 3 minutes to prepare the sauce.
Cook the eggplant slices in the sauce for additional 2 minutes to distribute the flavors. Shake the pan several times to mix but not mash the eggplant.
Serve hot or at room temperature.
Makes 4 servings.

I love indian food! There is a cheese called "Paneer", and it's kind of a cross between tofu and the creaminess of mozzarella. It's a firm cheese, and it's very filling. They usually make a gravy/sauce that goes with the paneer--yummy with rice!
You can find it at your local indian restaurant, or you could even buy some refrigerated paneer at an Indian grocer.
You could also eat this with an indian flatbread-naan...SO GOOD!

My favorite vegetarian recipe is oven baked potatoes with home made ketchup...
Just slice the potatoes to a size that you like...
Add:
Garlic powder (as you like)
Onion powder (" ")
Salt (" ")
Olive oil (as much as you prefer)
dash of cumin or chilli powder
Bake it at 350-400 until golden brown... Yummy!!
That's my recipe and it's very simple and easy to make, yet it tastes wonderful!!

Middle eastern food has lots of great veggie dishes. Falafel, tabbouleh, hummus with pita bread is a good one. Also vegetable curry over rice with lots of puppadums. Yummy.

i don't have one. but whenever there are a special occasion in the chinese calendar, some temples are worth visiting as they serve all vegetarian dishes for free. most of the dishes looks like meat, they even taste like meat, but they are not meat. yummy.

best cue is vegetarian name itself suggests vegetables now you can use any 1 or mix vegetables with your choice of spices 1)pour little oil or butter in a pan let it heat 2) add any seasoning like cummins seeds ,onions,garlic,ginger also you can add green or red chilli,add all vegetables and salt to taste more over if you can add cottage cheese (paneer),tofu,cheese for taste,tomatoes can add good taste to food and eat it with rice ,or bread white,wheat or pitta ,indian any which you like but trick is to heat the bread little to get the freshness back so you can enjoy it . potatoes alone can make good dish but they need to be cooked

you can also buy quorn and meat free 'meat' if you fancy it!

Of all the vegetarian / vegan recipes I've made, I still just love plain, old pizza! :) My favorite pizza dough recipe is from "How It All Vegan" and its a yummy yeast free, vegan dough!
