How about a vegetable satay? Grab three types of vegetables of different colours...lets say pumpkin, zucchini and frozen corn. Oh yeah...and maybe an onion if you like them. Peel and chop up the pumpkin. Chop the onion and throw it in the fry pan with a bit of olive oil. Once its sizzling, put in your pumpkin pieces. Cover the pan while you put on some rice to cook separately. As the pumpkin cooks, put about a Tablespoon of peanut butter into the middle of the fry pan (clear the pumpkin to the edges to make room). Add a little water or soy milk to the peanut butter. Add some soy sauce and half a cup of sweet chili sauce. Mix well to make the satay sauce. Once the sauce is formed, mix it up with the pumpkin. Cut the Zucchini up and add it to the pan. Add the frozen corn bits. Poke the pumpkin with A FORK NOW AND THEN (damn caps lock!) and when the fork easily goes into the pumpkin, the whole meal should be ready. Don't forget to keep the pan covered as much as possible between steps and keep stirring and adding water to stop it from sticking to the bottom.

Black beans and rice are a delicious meal that will last a while: make instant brown rice and set aside. Put a can (or two!) of black beans in a pot and add whatever you like -> chopped onion, green pepper, tomatoes, jalapenos, etc. Cook over medium heat until warmed through. Add to the rice and eat. You could also buy a package of tortillas (wheat or white) and put the rice and bean mixture inside that. Yummy!
Soups are easy, inexpensive and last a while. I have a good recipe for tortilla pesto soup. Email me if you want it! ;-)

you cant get much cheaper than good old rice and beans, or lentils. They are yummy, loaded with fiber, and good for you-super cheap. Lentil soup cooked in homemade veggie stock with loads of fresh veg is lovely

vegetable stir fry with brown rice...or basically any asian dish with vegetables. italian dishes are good too, such as spaghetti, vegetable lasagna, spinach ravioli, etc. these are my favorite dishes to make while i am at home.
