You could have a BAr-b-que.
However, Do a Tray of Cold Meats (3) - Ham - Beef- Pork. With that do (4) Cold Salads. Potato-Coleslaw-Mixture of Carrot and Walnuts Salad and last but not least your normal Caesar Salad. Also Warm Carrot and Beans with Butter and Honey is exceptional. Baby Boiled Potatoes with Butter and mint would not go astray either.
Now if you want something Hot/ Three Roast Chickens.
The above salads will do nicely WIth the cooked Chickens.
Now there is no need to cook the meats if you find you don't have the time.
Most delicatessens or butchery will have cooked Meats.
All is required is to slice in nice thin slices.
Individual desserts are too time consuming so Make two.
Trifle and Chocolate Pudding or Chocolate Cake.
No one can refuse Chocolate anything. Have ice Cream or custard on the side With a dash of Cream.
Hope that helps Good Luck

You're just doing the baking right? (People need to read the question.) A passion cake, jazzed up carrot cake with pineapple in it, lots of recipes out there, would be a good bet. Also hot cross buns, my personal favorite Easter food. Tickle your memory. Did grandmother always make a certain cookie, dessert, or other baked good? Keep those family traditions alive, but don't be afraid to start some of your own!!

Stella's Best Ever Cream Cheese Pound Cake
Have everthing at room temperature except the eggs
Flour and grease Bundt pan or tube pan (Angel food cake pan) please take the time to do this. You can use angel food cake pan. This makes a big cake so use the big pan.

3 cups of sugar.
Continue to cream mixture.
Add 6 eggs, one at a time.
Sift 2 teaspoons baking powder and

pinch of salt.
Add to creamed mixture. Add 1 teaspoon vanilla.
Bake at 325 degrees for 1 hour and 20 minutes. This is one of the best pound cakes I have ever eaten

If possible, ask different family members to bring a dish, that would help you out a lot. You could make the chicken or turkey. If that isn't an option, buy desserts from a store get some canned or frozen veggies and cranberry sauce for side dishes. You can get instant mashed potatoes that don't take vary long to make, and instant stuffing.
Hope this helps!

A huge ham and turkey. Then buy a couple of pints of coleslaw at KFC and pour it into a bowl and sprinkle peprika on it so it looks like you did it yourself. Buy 3 Eli's cheesecakes and take them out of the box so it looks like you cooked it yourself. Get a big can of Van Camps baked beans and put it into a bowl then add diced onions. Ask somebody else to do the deviled eggs.

Foodnetwork.com had great recipes. Another idea if your not into baking is to call your local bakery and see if they make either a bunny cake or last year our local bakery made a cross cake with peace lilies decorated on it. It was very neat and special.

We have a pretty big family too, my grandma makes yeast rolls... Oh and you don't have to do it all yourself, we divide it up, somebody brings a ham, somebody brings the turkey, my mom usually makes 2 giant salads, several people bring deserts. Just like veggies are done at my grandmas house, and the rolls (I love them :) ) Oh yah and yams are always delicious...
