I'm looking for vegetarian food and recipes! Anything fun, ethnic, easy, complicated.. just anything at all!

Mmm, deep fried. Plantains taste like a mix of bananas and potatoes, but in a good way. I got this here recipe from a Puerto Rican restaurant that is now closed down. These are great as a side dish to spicy food.

ingredients:
3 - 4 green plantains
jar of mediocre to good mild salsa
6 - 10 cloves garlic
kosher salt

1. Heat oil to 350F. Peel plantains, cut into 1 inch slices.
2. Fry plantains until outside starts to brown. Drain.
3. Smash rounds under a clean frying pan, into chips, about 2 inches across.
4. Fry rounds till golden brown and delicious. Drain. Salt to taste. Serve with sauce.

To make sauce

1. Dump entire jar of salsa into blender with peeled garlic. Blend till smooth.
2. The sauce isn't supposed to be spicy, but rather garlicy.

I'm not going to give you a recipe, but suggest a cookbook. You may be able to find it at your local library (that was where I first saw it. After photo-copying about half of it [ :)], I finally bought my own copy.) Madhur Jaffery's World Vegetarian. Ms. Jaffery is a very well-known Indian cooking expert. She herself admits to not being a vegetarian, but gives a wide variety of vegetarian recipes. Everything I have tried so far is very good. Some require a little tweaking to match personal tastes, but so do most good recipes. Personal favorite, Middle Eastern Stew of Chickpeas, Carrots and Potatoes. Close second, Nigerian Red Bean Stew with a Peanut Sauce.

I like maize with milk brought to the boil, and salt n pepper, cool a bit and an egg if you want to, then add grated strong chedder-a lot. You can heat it through to cook the egg and eat it like that or pour it into a baking pan and sprinkle some more cheese on top and put it in a hot oven to form a brown skin. I learned to make this in Italy, the woman who showed me calls it Tata Romana

A BIG BIG GARDEN ,full of veges!Nachos ,felafer,tofu burger,Greek salad,most of the mid east food is basically vegetarian
