All the suggestions provided so far are good, but some tacos do not only use the white crumbly cheese, asadero, oaxaca and manchego are also widely used. These last three melt beautifully and the manchego is the strongest flavor.

You might want to try queso fresco...it is crumbly, but has a rubbery texture..my husband is from mexico, and that is what they always use on tacos, but doesn't taste strong like goat cheese.

Also, try queso cotija...it is crumbly and salty.

I don't put cheese on my tacos....but when I use cheese in authentic mexican food, I use queso chihuahua...it melts nicely.

Fetta is good and there is goat cheeses. Go to a specialty store and find out if you do not get any help.

I think its called Oaxaca, not sure how they pronounce it. Its the soft white cheese used on tacos, etc and melted for sauces on chimichangas. Its so good!

I've had lots of mexican food that has Cotija cheese on it. (white and crumbly) It's tasty! ;)
