Pecan Chicken with Dijon Sauce
Ingredients:
4 boneless chicken breasts
1 1/2 sticks of butter
4 tablespoons Dijon mustard
6 ounce of pecans, finely ground
2 tablespoons canola oil
2/3 cup sour cream
1 teaspoon salt
pepper to taste
Preparation:
Place chicken between 2 pieces of waxed paper and pound gently until about 1/4 inch thick.
In a microwavable bowl, melt 1 stick of butter and 3 tablespoons of the mustard until just melted. Whisk to incorporate. Place the pecans on a dinner plate.
One by one dip the pounded chicken breasts into the butter/mustard sauce then into the pecans, coating thoroughly.
Melt the half stick of butter in a skillet, add the oil and heat to medium. Sauté the chicken for a few minutes on each side to brown and transfer to a casserole dish. Place in a medium oven (300°F) for about 6 more minutes.
Drain the pan of oil and deglaze with the sour cream, stirring with a whisk over medium heat. Add the remaining tablespoon of mustard and season with salt and pepper.
Place a pool of the sauce on each of four plates and place the cooked chicken on top.

Pork in Gravy over Butter Rice:
brown 1 lb of ground pork in non -stick pan
drain off fat
to meat in pan add:
one can pork or brown gravy
garlic powder
salt & pepper to taste
bring to simmer & let cook for about 10-15 minutes
In the mean time, fix rice and add butter.
Serve one scoop of rice with some of the pork in gravy.
*ALWAYS* drain the meat before adding back to pan.
So yummy!
(btw, also works great with ground turkey or chicken, just substitute the appropriate gravy. I also make this healthy by using fat free gravy, rinsing the cooked meat and using brown rice. )

Turkish Sish Kebab:
Add onion into a biggest bowl. Spinkle salt and wait for 10 minutes. Press onions by your palm, strain water and take off. Add oil and toss properly.
Pour meat into sauce and psh bowl into frigidare. Toss every 2-3 hours. Wait for a day.
Heat grill. Take out meat from frigidare. Fit meats over skewer one by one but keep 0.5 cm. distance in between. Fit skewers onto grill oven and wait for 3-4 minutes but turn round frequently. Lay sauce by brush sometimes to upper of meats. Grill tomato and fresh green pepper but turn round frequently.
Take off grilled meats into heated service plate.
