I do not understand how those other answerers concern that their recipes are "Chinese"style marinade!!!!!
I'm a Cantonese living in Hong Kong, we have 2 typical kinds of marinade for chicken, the soy sauce flavour or the oyster sauce flavour.
Soy sauce marinade for 600g Chicken
2.5 tablespoons soy sauce
1 tablespoons cooking wine or sherry
1/2 teaspoon sea salt
1.5 teaspoon sugar
2 gloves of garlic, chopped (or 1.5 teaspoons of garlic powder)
1 slice of fresh ginger, chopped
1 teaspoon of cornstarch
1/2 tablespoon of sesame oil (optional)
Oyster Sauce Marinade for 600 g chicken
2 tablespoons oyster sauce (Lee Kum Kee is a real good brand)
1 tablespoon cooking wine or chinese yellow wine
2 tablespoon of fresh ginger juice (or 1 tablespoon of ginger powder)
2 gloves of garlic, chopped (or 1.5 tablespoon of garlic powder)
1/2 tablespoon of soy sauce
1 teaspoon of sugar
1 teaspoon of corn starch
We prefer to put fresh garlic and ginger in the marinade.
Sometimes we marinate the chicken with black bean sauce.
You may just go to the Chinese grocery store to buy a bottle of Lee Kum Kee Garlic black bean paste (sauce).
2 tablespoon garlic black bean paste
1 tablespoon cooking wine or sherry
1/2 tablespoon of water
1.5 teaspoon sugar
1 teaspoon corn starch
1 tablespoon sesame oil
1 thai chili, chopped

Chicken, as with other meat like pork, beef, lamb, the Chinese can cook it in dozens ways. The very basic marinade for Chinese cooking consist of mainly soy sauce, dark & light, sesame oil, peanut oil, dry rice wine ( dry sherry will do ), five spice power, sugar, cornstarch, & of course, salt & pepper. You will learn to use the correct amount of some or all combined of the above, varying the quantity to taste.
To the marinade, or at times, add separately, the accompanying ingredients are: ginger, spring onion, garlic. These are better fry till you can smell the flagrance first in the wok or pan before adding the chicken marinated for at least half an hour or preferably a little longer.
One golden rule, do not over cook the chicken.

1 tbsp honey
3 tbsp orange juice
1 tsp five spice
1 tbsp sesame oil
1 tsp soy sauce
pinch black pepper
pinch white pepper
mix all together and place over chicken/pork and leave for about 2-3 hours, the longer you leave the more tendet the meat will be. When you are ready cook chicken breat under the grill and brush on marnidae for extra flavour.
This is my special chinese bbq ribs marinade.

3 Tablespoons vinegar
3 Tablespoons sugar
1 Tablespoon Soy Sauce
1 Tablespoon Plain Flour
1 Tablespoon Tomato Puree
Two or Three DROPS of Sesame Oil
Pinch of Salt
Mix all together until flour is incorporated into the mix - pour over chicken cubes/slices/breasts and allow to sit for 30 mins - then stir fry or bake in oven - it is sweet and sour!
Add teaspoon of Sweet Chili sauce for Hot & Sour
If you want a larger quantity - just double up the amounts

I use garlic, ginger, chilli, soy sauce, a little honey and some orange juice or vinegar, the quantities depend on your tastes but I just keep tasting it and adding more until I have enought for the chicken.

Add chopped chicken to:- Soy sauce, dry sherry, cornflour, crushed garlic and chopped spring onion.
Leave to soak for a couple of hours and then fry in a hot wok...when the meat is cooked add the sauce.

The others are good, but I use:
1 pound chicken
1 lemon's juice
1 tbsp sherry
3 tbsp oyster sauce
2 tbsp broadbean sauce OR hoisin
3 tbsp starch
a bit of sugar and chilli paste
