Beef enchilada casserole!
packet of corn tortillas
can of enchilada sauce
1 lb ground beef
cheddar cheese

brown beef, season with salt, pepper, cumino, and oregano
soften tortillas (either dip in warmed sauce or warm on stove or in oven), fill with beef, roll, place in oblong pan
cover with sauce & cheese
bake a 350 degrees F for 30 to 45 minutes to heat all the way thru (may also microwave at this point, but the cheese may not brown!)
Serve with Spanish rice, Refried Beans, a green salad, and fresh fruit for dessert.

Chicken fricase
6 thighs . slow basted in onions (2 large).garlic (2 cloves) 3/4 cup white wine . Over some water and potatoes . cover the chicken with wine and water and slow cook .

How about some salmon with lemon butter sauce? Just cook it in a teflon pan without any oil. And for the sauce, melt butter in low heat and squeeze some lemon juice.

make something in the crock pot, its quick and easy!! Take a sirloin tip roast, add a pkg of lipton onion soup, beef broth and cook 8 hours, while you're at work, then pour out half of the juice add a can of cream of mushroom soup, some pepper and serve with some instant mashed potatoes and YUM!!!!

PRE HEAT OVEN TO 350. TAKE CHICKEN SEASON IT ,SALT, PEPPER, GARLIC AND 3 LEMONS ,SQUEEZE 1 LEMON ON AND IN CHICKEN PUT THE LEMON IN .CHICKEN. PEEL 1POUND OF POTATOS AND QUARTER THEM. RINSE AND ADD TO BAKING DISH, TAKE REST OF LEMON AND ADD ALL OVER POTATOS ,ALSO ADD MORE SALT PEPPER, AND OREGANO OVER THE CHICKEN ALSO. . ADD A CUP OF WATER, AND 1/8 CUP OF OLIVE OIL. BAKE FOR 11/2 HOUR,UNTIL POTATOS ARE GOLDEN, SOURDOUGH BREAD, SALAD MADE OF CUCUMBER, ONION, AND TOMATO.A SPLASH OF OLIVE OIL,LEMON SALT.
