The greatest sauce for fried is poutine. This is a mix of cheese and gravy and was invented 50 years ago in Quebec. It has not spread to the US but soon will.

Ketchup is still number one. But I also love raw onions on my french fries with either ketchup or sate sauce and mayonnaise or ketchup with malt vinegar. OR another which I fantasize about is potroast sauce(the Belgians make it with lots of meat in it) or with sauteed peppers and onions and bacon over my fries. Yummy delicious!!!!!!!!!!!!!!!!!!!!!!!!!
