I bought a corn beef for St. Patty's Day. Last year I think I bought the same brand but it did not have a season packet. it was terrible. I think the one I just bought doesn't have the season pack again. Does anyone know what to add to the water so it tastes like something?

The seasoning pack is pickling spices.

You can buy it at the store or do the following...

2 tablespoons black peppercorns
2 tablespoons mustard seeds
2 tablespoons coriander seeds
2 tablespoons hot red-pepper flakes
2 tablespoons allspice berries
1 tablespoon ground mace
2 small cinnamon sticks, crushed or broken into pieces
24 bay leaves, crumbled
2 tablespoons whole cloves
1 tablespoon ground ginger

The link below is has the full instructions. Also, shows how to make homemade corned beef... I made this recipe last year. It was 100% better than any store bought corned beef. Store bought corned beef tends to be saltier but lacking depth of flavor. The recipe below was definately more flavorful.

As a former chef who has picled beef for corned beef, if it is seasoned don't add to many extra, vegetables like onions, carrots, celery, bay leafs and salt, it many sound funny to add salt to a piece of meat already seasoned. The salt will keep the flavour in, to many spices, like pickling spice are fine for an unseasoned pieces of meat like a pot roast or chicken.

Peppercorns and some of the spices will add flavour, but could take away from the original flavour the manufacturer had first start with, I generally add the veg after it has come to a boil , and near the end I then add the sections of cabbage and cook them in the broth.

USE PICKLING SPICE..IF YOU DON'T HAVE IT..BAY LEAVE..CORIANDER SEEDS,CARAWAY,MUSTARD SEEDS,GINGER,CINNAMON,CLOVES AND BLACK PEPPER ALL DO NICELY..USE WHATEVER YOU HAVE OF THESE SPICES...ENJOY AND HAPPY SAINT PATRICKS..A TIME FOR FUN
