I would suggest more protiens and some more calcium in your plan.
You might try adding some cottage cheese and/or tofu to your salad (for calcium). A mixed lentil (for protein) soup with added peas and coriander would be nice to go with some fresh bread too.
Bell peppers will provide the added crunch & vitamins.
Grapes and cucumbers make a great snack items too.
Whatever you do, just don't stay hungry - that's not good for anyone. :)

Looks pretty good, but add some more variety among veggies and grains. foodtv.com has some good veggie recipes under their get healthy section.
And eggs are NOT meat, no animal dies in our eating eggs. Anyone who says "it's the same thing because they would become chickens eventually" is stupid. You would know if you got a fertilized chicken egg, and youi wouldn't eat it. It'd be all bloody inside. Saying all eggs become chickens and are therefore meat is like saying a woman miscarries everytime she gets her period.

Broaden your horizons my dear. Try things you have never tried before. Ruttabegga oven fries are yummy, so are sweet potato and regular potato. Just brush with olive oil, season with salt and pepper, and roast in a 425 degree oven for about 20 minutes. You can also enjoy regular or rice based pasta, with a variety of vegetarian sauces. A grilled portabello mushroom makes a great burger substitute-top it with the same stuff you would eat on a burger. Enjoy fruits that you havent tried before-fresh pinapple, star fruit (carambola) clementines, black cherries, plums, blueberries, raspberries, etc. Try unusual veggies-artichoke, swiss chard, kale, white asparagus, turnips, etc. Go to a farmers market, find something new, and google for nutritional information and recipes. You can eat SOOOO much more than whats on your list. Try quinoa (pronounced keen wa) it is a grain similar to pasta, great source of protein. Experiment with wild and exotic rices. You can make pilafs, stir fries, rice burgers, etc. Beans and mashed potato mixed together make a hearty burger. SO many ideas. Check the ethnic section on here-I got a recipe for bean and cheese tacos that was awesome...

It looks good for a day or 2 but you should mix it up and eat more legumes and whole grains.
Some suggestions:
Whole wheat pasta salad with peas, bell peppers, cukes etc. tossed in a natural dressing.
Veggie Stir fry
Whole wheat angel hair pasta with a home made chunky tomato sauce
Rice and Beans

I think your plan looks good. I'd probably add a protein to lunch as well--like a veggie burger, or cheese on your salad.

not bad, not bad. But maybe have some variety, bean chilis, pasta, bean loaf, quinoa, etc. Maybe add some nuts or bean sprouts in the salad for added protein. Some baby spinach in the salad for iron. And i think your pretty much covered. :)

Doesn't look too bad. What about rice and beans? Together they make a perfect protein. You may want to look at this website that discusses more protein for vegetarians.

eggs would be considered meat....but everything else looks good...tho u might wanna work some beans or peanut butter in there for protein since u wont be eating any meat at all
