The Best Salmon Ever
Ingredients:

-Average Size Salmon
-8 Cherry Tomatoes
-2 Limes
-1 Lemon

1. Preheat oven to 350.

2. Cut up the ingredients and ramdomly place them across the salmon.

3. Wrap salmon in tin foil and place in oven for 30-40 minutes checking ever 10.

4. Serves 5-7.

Remeber every oven is different so check your salmon often

I love this recipe for Salmon.

LOW FAT BAKED SALMON

4 salmon fillets
Extra virgin olive oil - minimal
Salt & pepper
3 tomatoes, chopped, or 1 can chopped tomatoes, drained
1 small onion, chopped
2 tablespoons fresh lemon juice
1 teaspoon Italian or your favorite seasoning
Non-stick aluminum foil

Preparation time: 10 minutes
Cooking time: 25 mins

Preheat the oven to 400 degrees F.

Mix the tomatoes, onion, oil, lemon juice, seasoning, salt and pepper in a bowl. Season the salmon fillet with a little oil, salt & pepper.

Cut square pieces of the non stick foil. Place a salmon fillet on top a sheet of foil. Put enough tomato mixture over the salmon to cover the top side. Fold the sides of the foil over the fish and seal the packets closed. (Looks like a candy wrapped in paper).

Place the foil packets on a heavy baking sheet. Bake at 400 degrees until the salmon is just cooked through (approx. 25 mins). Serve as packets with wild rice and veggies.

This recipe is very easy, heart healthy and delicious.

Hi, here's one i do:

Salmon with Coconut: = Serves 4

4 Salmon Fillets
Small tin/packet Coconut milk
Fresh Dill, Thyme, Basil


Lay the Salmon in oven proof dish, put the coconut milk in a jug, chop the Herbs add the the milk and stir well season with salt & pepper, pour over the Salmon, cook in medium hot oven for 25-30 mins, serve with either a Fresh Green Salad or Veggies of your choice

Here is a super easy one-easy clean up too

Take a large piece of foil, lay some asparagus (or your favorite veggie) in the center of the foil, top with a piece of salmon. Spread some dijon mustard over the salmon, and season with salt and fresh gound peppers, and herbs if desired. Drizzle with extra virgin olive oil and a squeeze of fresh lemon (I put a thin slice of lemon on top of the fish) Wrap the foil around the vegetables folding in the sides to form a pouch, leaving a little room for steam Bake in 375 degree oven for about 18 minutes. Use caution when opening-the steam will rush out! I serve the individual packets right on the plate, and serve it with a salad and steamed new potatoes with parsley butter. No pan to wash!

Grind 10 cloves of garlic in food processor.

Place in a bowl and add

2 tbsps of dijon mustard
3 tbsps of soy sauce
6 tbsps of olive oil (extra virgin)

Mix ingredients and cover the salmon with it (this should be enough for 2-4 lbs) Marinade the salmon in it for 1 hour (or more if you desire) Then grill it outside or sautee in a skillet or bake at 350 degrees in oven until fully cooked through.

Cover a salmon fillet with plenty of salt and leave in fridge for one hour. After one hour wash off salt and pat dry with paper towel. Cut salmon very thin. Place in dish and cover with juice of 2 fresh limes and one red grapefruit add a small spoon of sugar and a little light soya sauce to season . Leave to stand for approx 15 Min's.No worries the lime and grapefruit juice will cook the salmon without any heat
Meanwhile
Prepare salad of very thinly sliced Fennel bulb mixed with Juice from 1 lime and a little salt.
Arrange salmon slices on a plate. Chop some fresh coriander and mix with Fennel salad.
Place fennel salad on top of the salmon.
Enjoy.

Melt 2 oz Butter
Take 2 tbs of brown sugar
2 tbs Soy Sauce and add to the butter. Heat until the sugar has desolved and add the juice of a lime.
Set aside to cool.
Take a couple of Salmon filletts, skinless and boneless and pour over the cooled sauce and let marinade to 2-3 hrs.
Place the fillets under the grill and grill for 6 mins a side.
Serve with new potatoes, broad beans and fresh peas.
Low fat and delicious.

I haven't done this for ages, but I like to crush or grind some mixed peppercorns (red, yellow, green), I use a pestle and mortar for this, press these onto both sides of salmon steaks, drizzle with olive oil and leave in the fridge for a hour or so, turning over half way.
The steaks can be fried, grilled or baked, served with a wedge of lemon and vegetables of your choice.

Grilled Marinated Salmon

Get one bottle of Ken Steak House Raspberry Walnut, Low Fat Salad Dressing.
Put the salmon fillets in a deep dish.
Pout half of the salad dressing over them to cover (or turn after 30 minutes)
After one hour, place fillets on hot grill, serving side down first.
Cook for 8 min per side, depending on thickness of fillet.
Turn only once.
Put fresh, clean spinach on a plate. Pour Raspberry salad dressing on the leaves.
Place a fillet on the spinach.

PASTA WITH CHIVES AND SALMON
(for 1 person)
Ingredients: 80 g pasta (any size you like, I used penne rigate here), a piece of fresh salmon, chives, 2 tsp green olive pâté, 1 tsp capers, extra-virgin olive oil, salt, green and black pepper.

Cook pasta “al dente”. While pasta is cooking you can prepare the salmon, it is very quick. In a pan put some extra-virgin olive oil, salmon cut in small pieces, chopped chives, and black and green pepper. Stir well and cook for 5 minutes, then add chopped capers and olive pâté. Cook for 10 minutes and add salt.
