Tofu is "Bean Curd". It's originally made in China thousands of years ago and now widely consumed all over Eastern Asia, like Korea, Japan, Vietnam, Malaysia, etc. It's major ingredient is plain soy milk and they add some "Nigari" solution to make it firm.
It's rich in protein and its flavor is relatively mild. Tofu can be added to various dishes like soup, pasta, stir-fry, salad.

Tofu (the Japanese "Romaji" spelling), also called doufu (the Chinese "Pinyin" spelling often used in Chinese recipes) or bean curd (the literal translation), is a food of Chinese origin[1], made by coagulating soy milk, and then pressing the resulting curds into blocks. The making of tofu from soy milk is similar to the technique of making cheese from milk. Wheat gluten, or seitan, in its steamed and fried forms, is often mistakenly called "tofu" in Asian or vegetarian dishes.

Imagine cheese made out of soy milk. Looks like feta cheese (the greek cheese) or a thick, heavy sponge full of water.

Tastes nothing, but will taste any condiment or food you mix tofu with.

Bon appetit !

Tofu is made from okara, which is the pulp leftover from making soymilk. A coagulant, usually magnesium sulfate (epsom salt) is added to make it bind. It is put in a press, and pressed until it becomes silken or firm in texture. It is high in protein. Most of it is made with unhealth modified soy, but some non GMO is available at health food stores. Most soy in the US is modified and should be avoided-it is known to cause people to develop severe allergies, which is what happened in my case

Tofu is fermented soy beans. The curd from the beans is extracted by fermenting and then it is pressed together into nice, symetrical blocks and sold as tofu.
