Do you mean the iced coffee you get in the Vietnamese restaurants and Thai iced tea found in a lot of coffee houses now? I was hooked on both myself.
Vietnamese iced coffee: Pack a tall glass with ice. Pour 4 ounce express (strong hot coffee) over ice, then add sweetened condensed milk.
The Chinese cooking restaurant supply store sells those little 4 oz. metal coffee strainers with tiny lids that you can set on top of your glass of ice. You put a good tsp.of ground french roast coffee, add boiling water bring level up to near the top, snap on the cover. When all coffee has finished dripping into the glass of ice, remove and add the sweetened condensed milk. Let it sit for a few minutes, then stir & drink.
Thai iced tea: No special equipment. But you need to buy the thai tea leaves. I've seen it in tea bags but then also have purchesed as a package of loose leaves at a Thai grocery store. Brew your thai tea, strain out loose leaves. When still hot, add your sugar to taste.. Refrigerate sweetened tea. When chilled, fill a glass with ice, pour in cold tea, leaving room for half & half cream. Stir your drink. Enjoy.
I just read all your answers. I have missed-out on something else good? Sorry, I didn't know that there really is a Thai iced coffee.

INGREDIENTS:
2 tsp cardamom, ground
4 tbs sugar
4 tbs heavy cream
1 tsp almond extract
PREPARATION:
Use your favorite brewing method to make 4 cups of coffee, mixing the ground cardamom in with the grounds first. Add sugar and almond to the hot coffee, and mix until dissolved. Let cool. Half-fill 4 tall glasses with crushed ice, then fill up with chilled coffee.
Add a spoonful of cream to each, just before serving.
Serves 4
Or another good one for 4 servings is:
3/4 c Ground Coffee
2 2/3 c Water
Ice Cubes
Cardamom
1/2 c Evaporated Milk
Sugar To Taste
Using amounts specified, brew coffee in a drip-style coffee maker or percolator. Fill four 10 to 12 ounce beverage glasses to the rim with ice cubes; then fill two thirds full with coffee. Into each glass, stir about 2 tablespoons evaporated milk; add a dash of ground cardamom and sweeten to taste with sugar.

This is a really good link that takes you step by step. It is done by a Thai man. You need to buy the Thai tea that is made for brewing Thai Iced Tea. I use half & half or heavy cream in mine and I mix the sugar into the water and tea before I strain it - so it dissolves completely. I find the more you strain it and get it crystal clear; the more people enjoy it.

You can buy the Thai Tea on line

I usually serve it on crystal clear ice cubes and let people pour the cream down the insides of their glasses. It looks really fantastic.

Ingredients:
Strong, black ground coffee, sufficient to brew 4 cups
4 tablespoons sugar
4 tablespoons heavy cream
2 teaspoons ground cardamom
1 teaspoon almond flavoring
Crushed ice
Add the cardamom to the ground coffee, and brew the coffee.
When the coffee is brewed, add the sugar and almond flavoring, mix well and then let the coffee cool to lukewarm.
Fill four 12 ounce highball glasses half-way to the rim with crushed ice and then fill two-thirds full with coffee.
Into each glass, stir about 1 tablespoon of heavy cream.
To achieve a layered effect, hold a spoon on top of the coffee and pour the cream slowly into the spoon so that the cream floats on top of the glass over the coffee.

*Make instant coffee - very strong. I dunno about the States, but here in Thailand the instant coffee is pretty good
*mix it with sweetened condensed milk to taste
*pour over ice.
Easy as pie... sometimes some people use evaporated milk *and* sweetened condensed milk, so it's still creamy, but not as sweet. Do whatever suits your taste!
