-Have stored in the frigerator but they seem to dry out.
-How long can they be stored for?
-We mainly make rolls that dont actually have sushi in them.

In an ideal world, sushi should be eaten of the hands of the sushi chef. But for most people, we have to use the fridge.

You can put them in tupperware, wrap it with damp towels and inside a plastic bag to prevent evaporation, before you put it in the fridge.

Maybe the rice was not cooked with enough water. You can prevent this by soaking it for 10-15 minutes before cooking the rice, so water penatrates in the core of the rice. Don't over soak or it get mushy.

Make sure your fridge is not too cold. It should be around 8-12C degree.

For cooked and vegetable sushi, you can keep them for few days. For raw fish, eat as soon as possible, probably no longer than 2 days depending on how fresh the fish is.

Do you mean you make Maki rolls without raw ingredients? They're still called Sushi. They stay fresh longer than the Nigiri ones with raw fish.

Raw Salmon is the fish to be concerned about. Normally a salt water fish, it nonetheless spawns in fresh water, where it is susceptible to parasites that can be passed on to the diner. The best sushi is prepared in front of you and served to you by a professional. It is almost theater. Prepackaged Sushi is questionable at best and probably SHOULD NEVER be thrown in the refrigerator to eat "at some later time." Once it's 24 hours old it's simply not good and a risk to your health, as well. But as someone already posted, it's a way better choice than anything from McDonald's or most fast food, for that matter.

generally Sushi is never good to store in the refrigerator for more than one day. Try to buy/ make as much as you can eat, because it usually becomes hard no matter how you store it

It is meant to be eaten real fresh, within one day, it does nto store well.
