It's called "a person who doesn't eat red meat"... I'm not sure there's any title for it.

its not called anything. If you eat meat in any form, pork, poultry, etc, it is not vegetarian. Vegetarians eat no flesh, from fish or animals. Pescatarians eat no meat, but do eat fish and seafood. Vegans do not eat animals or fish, or use any of the by products, like cheese and eggs, or shampoos and cosmetics that contain animal tested products, or wear or use leather or other animal products. You don't have to have a title or label to eat the way you chose. If you don't eat red meat, fine. If you don't eat other meat, even better, but it has to be whatever works best for you.
