I have 2 very different versions!

PUERTO RICAN style

Carne Frita (beef or pork)

Prep Time: 45 minutes

Servings: 6

Ingredients:

2 lbs of stewing beef or pork
salt and pepper to taste
1 lemon or 1 lime
1 packet of sazon goya con culantro y achiote
3 garlic cloves mince finely
1 teaspoon of dried oregano

Instructions:
Wash and season meat and fridge overnight. Take a pot and add olive oil.
Let heat before adding meat one at a time and positioning them in the pot.
Keep heat medium for about 15 minutes then turn over. Make sure first side
is very browned. After 15 minutes, lower heat to low and turn again and let
cook for another 15 minutes in low heat checking ocassionally and moving
around to make sure no burn spots and to assure even browness and cooking.
Remove and put on paper towel to soak up grease. In grease left over, you
can fry some platanos for tostones.

Cooking Tips: If an additional 5 minutes is needed that ok! Meat should be tender and nice browned with some crispy spots.

FILIPINO style

1/2 kg sirloin
1/2 cup vinegar
1/4 cup dark soy sauce (preferably Filipino soy sauce)
3 garlic cloves
1 laurel leaf
10 whole black peppercorns
1/2 cup water
1/2 teaspoon salt (to taste)
2 white onions
3 tablespoons cooking oil

Method:

Slice sirloin 1/8 inch thick.
In a saucepan put in the meat, vinegar, soy sauce, garlic,laurel leaf and peppercorns. Boil the meat over low heat. Leave uncovered until the smell of vinegar dissipates, DO NOT STIR.
Add water when needed.
Cover and let simmer until meat is very tender.
Season with salt.
Slice the white onions into rings.
In a frying pan, saute the onions till wilted. Remove from pan.
Put in the meat, reserve the liquid it was boiled inches
Brown the meat. Add the reserved liquid. Let it simmer till liquid has been reduced.
Transfer meat to a platter, pour sauce over. Top with sauteed onions. Serve hot with Jasmine rice.

Pork is going to your main ingredient. Chop thawed pork into 4-5 inch cubes. To marinate your going to need:
1. chopped garlic (you can fine that pre-chopped in the dairy dept it sames time).
2. Pepper
3. Salt
4. Olive Oil
5. Sason with achiote
6. Apple vinegar
7. Chopped Recaito or Cilantro
8. Chopped onions

Put the pork in a big bowl. Add garlic to your liking. I like a lot. 1 teaspoon of pepper,1 teaspoon of salt, 1 pk of sason with achiote, 4-5 cap fulls of apple vinegar, hand full of recaito or cilantro and 1 whole onion chopped. Mix well. To assure the meat is well seasoned let sit for 3-4 hours, you can even let sit over night in th refrigerator.

Once that meat is marinated. Deep fry it and service it with rice and beans; and nice salad. I makes a wonderful meal.

Like Cotoletta alla milanese?
well, put your carne in a mix of eggs crude and shaken ;
after, take you carne and cover it with "pane gratuggiato" and then put your carne in a frying-pan with a few of corn oil.....
fry it for some minutes and then dry your carne with a peace of kitchen paper.....
REMEMBER: before of all these things, cut your carne in slices

I am puerto rican, and I always used to put "the works" to season my chicken. But.... i found that fried chicken tastes the best with simple salt and pepper. Take a whole chicken, a cut it up into a bunch of smaller pieces (or you can just buy legs and wings). Season it with salt and pepper, and fry it using medium heat until nice and crispy. After frying, put them a paper towels in one layer. If you pile them up, they'll get soggy. Don't cover them either when frying and after you put them on paper towels. Enjoy!
