Giada's Famous Fettucine Alfredo
18 ounces fresh fettuccine
2 1/2 cups heavy cream
1/2 cup fresh lemon juice
12 tablespoons unsalted butter
2 cups grated Parmesan
2 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground white pepper
Method:
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain.
Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat.
Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

I don't know if you will consider this Alfredo sauce, but I make something similar that I call garlic cream sauce, in which I serve along side salmon. First, take some finely chopped garlic (as much as you like) and saute it with a little butter until it's cooked, but not browned. then pour in a pint of heavy whipping cream and bring to a boil. Add 2 cups of freshly shredded Parmesan cheese mixing the sauce at the same time. Add salt and pepper to taste. if it's to thin for you, it will usually thicken up a bit after you take it off the heat. Toss with your favorite pasta. yummy! And it takes me less about 20 minutes to make. Enjoy!

Fettucine Salmon Alfredo Serves 4
• 10 ounces fettuccini pasta
• Salmon
• 1/2 cup butter
• 5 cloves garlic, chopped
• 1 cup heavy cream
• 1 egg yolk
• 2 cups freshly grated Parmesan cheese
• 2 tablespoons dried parsley
1. Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain.
2. In a large skillet melt the butter and add the chopped garlic. Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic. Add salmon.
3. Pour about a 1/4 cup of the heavy cream into a small bowl. Add the egg yolk and beat together; put aside. Pour the remaining cream into the frying pan. Increase the heat to medium-high. As the cream starts to boil, mix rapidly using a whisk. Slowly add the cream/egg mixture. You do not want the egg to curdle. Continue whisking until well blended.
4. Add 1 cup of the Parmesan cheese and continue to mix the cream. Pour in the remaining Parmesan and the parsley, mix until smooth. Immediately remove from stove. Serve over cooked pasta.

excuse me; I'm italian and I don't know what's Fetuccine Alfredo... why you calll this kind of pasta so?
because in Italy there isn't any Fetuccine Alfredo....
There are fetuccine al ragù (a souce with tomatoes and carne trittata)
maybe Alfredo souce is RAGù?
