Bean Sprouts are one of these veggies, and the other two are green or purple-leaved and smell/taste like cilantro.

Pho are usually served with coriander leaves, ngo gai, mint, basil, lime, bean sprouts, and chile peppers.
The one that taste like cilantro is probably ngo gai, also known as Wild coriander.

The Vietnamese restaurant where I have it all the time serves Pho Tai with hung que (Thai basil), bean sprouts and a slice of lime.

All of the other veggies are cooked in the soup which takes 6 or 7 hours (minimum) to make!

It comes with about 2 tablespoons (each) of hoisin sauce and VERY hot chili sauce on the side. These are added to taste by the diner.

I am a "pepper champion" so they also chop up 2 or 3 dragon chiles for me on the side.

All the people above me described Phở from the South. Phở originated in the North. According to the authentic Northern style, that soup is not to be consumed with all those herbs and vegetables or sauces these people referred to. A true Northern restaurant would only give you an wedge of lime and a few slices of hot chili pepper or better off, ớt hiểm, the red small but burning pepper. It takes a lot to make such good broth and you are willing to ruin all that aroma and flavor by throwing in all those "helpers"? Please, don't. Before eating, you first must place your face just above the bowl and smell the alluring aroma of the soup then slurp a spoonful of that flavorful broth and proceed to eat a few noodles and a piece of meat.

@ my local Vietnamese restaurant, pho is served w/ cilantro, Thai basil, slices of fresh green pepper (jalepeno), and sliced lime or lemon along w/ fresh bean sprouts.

Most places in Hawaii serve it with Thai basil, cilantro, bean sprouts, lime slices.

Of course you can add vegetables to your soups. Examples would be: fried tofu, sliced cabbage, shredded carrots, mushrooms, bok choy, lettuces, bean sprouts, jalapenos, and whatever other veggies you like.

those are mint leaves and then there is the lemon wedge.
btw dont forget to add some hoisin sauce.
i love pho!

like both, fruits: berries, oranges, pears, peaches, dragonfruit, pomegranate.... Vegetables: CUCUMBERS, bok choy, green beans, broccoli,.... My spouse and i guess the two are great.
