Why are there no knives? They give you a spoon and fork but no knife. I love the food and have been to several different chinese restaurants... No knives????? Why?

You should be using chop-sticks ;-) But since your like me sometimes-I ask for a knife if needed.

Because the meat and vegetables are already cut into bite sized pieces. If you eat the food properly you don't use the fork or tablespoon.
The forks and tablespoons are only for the benefit of those western savages who don't know how to dine properly with chop sticks!
Chinese soup spoons are an engineering wonder and should be used everywhere!

The truth is that Chinese food should always be served in bit size. The larger pieces like fish can be taken apart easily with chopsticks or spoons.
The anicient Chinese believe using "weapons" at the dining table is barbaric.

I dont know about knives, But I did see a waiter scrape rice from a used dish back into the steamer

Why would you need a knife? The food is already cut into bite size pieces & it's tender. They give you chopsticks and utensils are avaliable on request. They do all the work for you already.
It's actually ingenious!

All the ones Ive been to serve meat in bite size pieces, so no knife is needed.

knives are more barbaric and less desirable than forks. try picking up the ribs with your hands if necesary.
